Kajin (meaning Fire of Gods) is yet a new series from Hatsukokoro, combining the excellent Blue-2 (Aogami-2) carbon steel with a stainless clad for less maintenance and trouble. Ultra thin for the laser lovers, Features a Migaki / Polished finish and a Wa octagonal mono ebony handle that matches perfectly. Meaning “Beef knife” in Japanese, the Gyuto is the most common and basic of all knives, the Japanese version of the classic western Chef’s knife. It is used as a multi-purpose knife, suitable for meat, fish, vegetables and more. Can be used with almost all different cutting techniques.
